TASTING NOTES
Clean aromas of Asian pear, white honey, blossom and crushed chalk. Textured and detailed, the palate has a floaty feel, like club soda. Young quince, apples and melon abound, curving along a line of salted butterscotch to a deeper shade of waxy honeycomb. On the mid-palate, the sensation of peaches and cream is run through with a lifted, lemony acidity as the wine crests into a citrus-toned finish.
WINEMAKING
A blend of Grenache Blanc, Piquepoul Blanc, Roussanne, Marsanne. The grapes were picked at different stages. The fruit was cooled and whole bunch pressed before spontaneous fermentation took place. The wine was barrel fermented and aged in 500L French oak barrels. A portion of Grenache was whole bunch fermented for added texture and complexity. The components went through 80% malolactic fermentation. The wines were aged for 1 year in barrel prior to blending and bottling and spent six months in bottle before release.
